My good friend Jenn is back with another must try recipe for Meatless Monday, and I can’t wait to try this one. It’s a super simple white pizza using goat cheese, parmesan and fresh veggies. The pizza “crust” is actually a homemade whole wheat tortilla using a recipe from the awesome 100 Days of Real Food blog, right here. Just add red and yellow peppers, cherry tomatoes and arugula (sea salt and cracked black pepper to taste) to get this perfect personal sized meatless pizza, and the best part is that since they’re personal sized, you can customize them to everyone’s taste! Bake at 400 degrees for just five to seven minutes and this fresh, healthy pizza is ready! Enjoy!
