I found this recipe on a lovely little blog called The Wednesday Chef and fell in love with it the first time I made it. First of all, it couldn't be easier. And, more importantly, it is absolutely delicious. It has quickly become one of the most requested little dishes I can whip up in no time. What I love about it is its simplicity, all you need is:
- Olive oil
- a can of good quality tomatoes (I actually use a container of Pomi chopped tomatoes)
- good ricotta, the fresher the better
- salt to taste
- your choice of pasta
- fresh basil
Empty the tomatoes in a pot, add the garlic, a bit of olive oil and salt and simmer while the pasta is cooking. Once the pasta is done, drain it, add the tomatoes and bring to the table. I like to dish out the pasta this way, then add a big dollop of ricotta, stir it to mix it into a delicious pinky sauce and top with some of the fresh basil. And voilà, you're done! Like I said, it couldn't be easier, but it is such a crowd pleaser. If this recipe is too simple for you, take the culinary challenge up a notch by making your own pasta!
