Mamatoga Meatless Monday Recipe: Grilled Heirloom Tomato and Goat Cheese Pizza

I was so excited to get a chance to head down to the new Trader Joe's yesterday and along with a ton of my favorite Trader Joe's staples (Danish pancakes anyone?) I also picked up some mini heirloom tomatoes on my friend Jenn's suggestion. I wanted to use them as soon as possible to be able to eat them at their freshest and most flavorful (they are AMAZING by the way) so I decided to whip up a super easy pizza perfect for Meatless Monday. This recipe is nice and simple and uses only a few ingredients. You can either buy your pizza dough or make your own.

  • mini or regular sized heirloom tomatoes, chopped
  • 1/2 cup shredded mozzarella cheese
  • about 3/4 cup (or more if you're a goat cheese hound like myself) of goat cheese, crumbled
  • 1 pizza dough
  • 1 garlic clove, halved

Go here for a great guide on how to grill a pizza dough if you're new to the process. Grill that crust up then rub it with garlic and sprinkle with the tomatos and cheeses. Close the grill lid and let it grill for about 3 minutes. Serve immediately! There are tons of different ways you can customize this easy summer pizza, add olives, onion, more garlic, more cheese, more veggies. Whichever way you make it you're going to love it, and the kids will too. And if you're going down to Trader Joe's this week get yourself some of those mini heirloom tomatoes, you'll love them!
