Make it This Weekend: Mango Lassi Smoothies

snowflakeMy kids are picky (especially the three year old) but for whatever reason they are more likely to try anything in smoothie form, and they absolutely love mango lassis. A Lassi is a popular, traditional, yogurt-based drink from India & Pakistan and the mango lassi is perhaps the most popular here in the US. It is super easy to make, and mangoes have generous amounts of vitamin C and vitamin A, plus the coconut milk is a healthy milk alternative that has a ton of health benefits of it's own. We like to use the sweetened kind of coconut milk to add sweetness to this drink, but you can also add honey to taste. Mango Lassi {makes about 2 cups}

1 cup plain yogurt 1/2 cup coconut milk 1 cup chopped mango (peeled and stone removed) 2 tablespoons honey (more or less to taste) A dash of ground cardamom (optional, if your kids are more adventurous and would like a more authentic lassi)

Put mango, yogurt, milk, honey and optional cardamom into a blender and blend for 2 minutes. Sprinkle with the dash of cardamom if using, and serve! The lassi can be kept refrigerated for up to 24 hours.
