If your house is anything like my house on this morning after Thanksgiving you have a LOT of leftovers! Rather than just make sandwiches, why not try this delicious way to use up all of your leftovers together, it is super easy and can be made any way you like with whatever leftovers you have!
- 1 to 2 celery stalks chopped (optional)
- 1/4 onion chopped (optional)
- Mashed potatoes
- cooking spray
Preheat oven to 350 degrees. If your stuffing has gotten soggy, then add a bit of crunch to the dish by sauteing the celery and onion in a saute pan over medium heat for 5 minutes. Take a look at your leftovers to determine what size baking dish to use. I am going to use an 8×8 dish. Spray evenly with cooking spray and layer the bottom with stuffing. Sprinkle the celery and onion over the stuffing, add a layer of turkey, pour on the gravy and top with mashed potatoes. Drop small pats of butter around the top of the shepherds pie. Cook for 15 – 20 minutes or until heated through. Serve with gravy over the top and cranberry sauce on the side. You can also add whatever leftover vegetable you want as well, we have some leftover green bean casserole that I'm going to add to mine, and I might do half mashed sweet potatoes and half mashed regular potatoes. You can even add a little cheese if you want, the fun comes in doing it however you choose!
